Eat clean challenge starts now...

I was going to wait until March 1, but why wait for the beginning of the year, month, week, or day. And so I am not waiting for any of the above and starting an eat clean initiative. This will involve:
1. Eating fresh produce (not hard)
2. Not eating anything out of a box, carton, package that is pre-made
3. Uncooked items in a box like pasta will do
4. If I cannot pronounce the ingredients, I wont eat it
5. Limit dairy (cannot eliminate from my day)
6. Drink 3 liters of water
7. No wine, alcohol M-F (thats easy for me)
8. I may finish my tofu nuggets and few other items over 1 month because I hate wasting good food. However, I will not buy new items even if they are the most delicious things...

May add to this list as I think of other criteria...

Today for dinner I am planning on making :

1. Sonal's Kale Salad

Recipe: Chop the kale in fine ribbons. Cut the hardy stems (for lack of better word) out.
Soak kale in a veggie wash (I buy the vinegar based from local grocery store or Trader Joes). I soak all my veggies because I don't usually buy organic produce (unless it is on sale) and this clears my conscience a bit :)
Rinse the wash out
Add 2 tbsps of olive oil to 2 bunches of kale, a bit more if you like it that way. I just drizzled some...
Add 1 whole lemon juice. Massage the kale in Sonal's words for it to soften and let it sit for a few minutes.
Add some parmesan cheese shavings
Add a pinch of salt and pepper if you prefer

2. Mint chicken (all natural)

Recipe:
I first made a mint chutney with mint, cilantro, cumin seeds, ginger and garlic.
Chopped chicken breasts into cubes
Add may be 1/2 a cup of the chutney to 4 chicken breasts (you figured by now that I done measure)
Add Shan's chicken curry masala (you can add curry powder if you dont have an Indian store close by)
Add salt to taste
Add a cup of yogurt
Baked @400 degrees for 40 minutes

3. Jeera rice

Recipe:
Warm 1 tbsp ghee (clarified butter that I make at home by cooking a slab of regular butter on low heat until it bubbles for about 10 minutes)
Add a tsp of cumin seeds (aka jeera) to the hot ghee
I added peas and carrots
and then 2 cups of washed basmati rice
I eye ball water to cover the rice and then some
Add salt to taste (I undersalt my rice)
Cook on medium heat. Cover the pot you are cooking it in (these are the details mom insists on :))
